Steve's Amaretti Cookies
You know how it is... Sometimes you just yearn for something sweet... And 99.99% of the time you really should reach for a beautiful fresh piece of organic fruit or a handful of berries! But sometimes the occasion calls for something a little more elaborate... We've been experimenting with healthy delicious treats, and this is what we've come up with:
My husband makes these almost every weekend. They are ridiculously easy to make. The perfect treat to whip up if you are having guests over, and are especially delicious served warm, fresh from the oven!
And your whole house will smell divine!
Ingredients
400g almonds
3 egg whites
1/4 cup maple syrup
1 teaspoon vanilla paste
10 drops almond essence (optional)
Method
Place almonds in a food processor and process until roughly ground (we use our Vitamix with the dry jug).
Place in a bowl, add all other ingredients and mix together
Line a baking tray with baking paper
Place on lined baking tray in 1-heaped-tablespoon amounts
Bake in pre-heater oven (170 degrees Celsius) for 18 minutes or until the cookies start to brown.
Serve and enjoy!
TIP: These cookies are best eaten the same day they are made. They go soft and a bit "sticky" after a day or two, so they aren't the ideal make-ahead cookie.
