Lemon Garlic & Coriander Potatoes
This may look like a humble plate of potatoes with a generous green garnish, but it is actually our sure-fire, secret weapon against colds and flu's! I call this dish my "garlic delivery system" and we eat it a LOT during cold and flu season! I make up a big plate of it at the first sign of a cold or when everyone around us starts getting sick! If you tried to eat raw garlic on its own it would burn like battery acid! But combining the raw garlic with roasted potatoes, coriander, and lemon juice, something magical happens and it becomes a delicious way to eat our medicine!
If you are not of fan of coriander (cilantro) you are not alone. My husband absolutely loathes the stuff, but interestingly he really enjoys this dish! But if you are too scared to try coriander, fresh parsley works just fine too.

So here's the recipe:
Ingredients
Potatoes, peeled and cubed. How many you use it completely up to you!
Juice of one lemon
2-3 cloves of garlic, crushed (or more if love garlic as much as I do!)
I bunch of coriander leaves, finely chopped (or parsley if you are a scaredy-cat!)
Olive oil
Salt and pepper
Method
Toss cubed potato in olive oil and a little salt and pepper, spread in a baking tray and bake for 20 minutes at 180 degrees Celsius, or until golden and crispy.
When cooked place in a large bowl whilst still warm with all ingredients and toss to combine.
Season with salt and pepper to taste.
This dish can be enjoyed warm or cold!
