Broccoli Celebration Salad
I call this Broccoli Celebration Salad because it's so bright and vibrant, it's a great choice to serve a festive get-togethers. And because there are no salad leaves to wilt, you can make it in advance and it will stand up well to a couple of hours on a table or picnic rug.
Ingredients
Salad
Two heads of broccoli
One pomegranate, de-seeded
1 small bunch of red grapes
100g sunflower seeds
1 red onion, finely diced
Dressing
Juice of 2 oranges
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon pomegranate molases
Salt and pepper to taste
Method
Cut the tiny green florets from the broccoli heads. This salad only works when you use the soft green florets, so discard all of the stalks and use them finely-sliced in a stir fry!
Cut the red grapes in half
Combine all salad ingredients in a large bowl and toss to combine.
Add dressing and leave to marinate in the fridge for up to an hour. Tossing occasionally.
