Chinese Veggie Stir Fry with Miso, Lime Chilli & Garlic
Stir Fries are great for quick after-work meals, and are a great way to add a rainbow of healthy veggies to your daily diet. This one gets rave reviews at my place!
This recipe is virtually identical to my Chinese Slaw with Spicy Miso Lime Dressing, except the veggies are stir fried for a few minutes and the dressing is added at the end.
And heres a tip! I make a double batch of veggies and sauce, and I keep half aside to make this delicious salad to for my husband and I to have at work the next day with a healthy protein (or to have dinner ready for when we get home!).
Ingredients
Stir Fried Veggies
1/2 a small-medium Chinese Cabbage, finely sliced
1 large carrot grated or chopped into matchsticks
2 green onions, sliced
1 white onion, finely sliced
1 red capsicum, julienned (sliced into thin strips)
1 tablespoon black or white sesame seeds for garnish
Dressing
1 teaspoon lite soy sauce or tamari
Juice of 3 limes
1 red chilli, finely sliced
1 clove garlic, crushed
1 teaspoon sesame oil
1 tablespoon mirin
2 tablespoons miso paste
2 teaspoons grated fresh ginger (about a 2cm slice, peeled and grated. Using a ginger grater gives a wonderful fine texture)
Method
Dressing
Combine all ingredients and whisk thoroughly until well combined
Stir Fried Veggies
Place 1/2 tablespoon of oil of your choice (I know it's not traditional but I use olive oil!) in a large frying pan or wok. Heat and add all veggies. Cook on medium-high heat for a few minutes or until the veggies just start to soften a tiny bit.
Add dressing and toss through for 30 seconds-1 minute.
Remove from heat and serve garnished with sesame seeds.
