Haloumi & Rosemary Veggie Skewers
My husband calls these skewers "fancy barbecue food"! They make a gorgeous appetiser or side dish.
Ingredients
200g haloumi cheese, cut into equal-sized chunks
6 stalks of rosemary
1 red capsicum, chopped into equal sized pieces (2-3 cm square)
1 green capsicum, chopped into equal sized pieces (2-3 cm square)
1 red onion chopped into quarters, with layers separated
1 zucchini, sliced thinly
Cherry tomatoes
Salt and pepper
1 lemon, quartered (to serve)
Method
Take your rosemary stalks and trim them so they are all the same length.
Remove rosemary leaves from each stalk leaving 4-5 cm of leaves on at the top for decoration.
Thread vegetables and haloumi onto each rosemary stalk. See pics below for how I did it. This is your opportunity to be creative!
You may need to pierce your veggie pieces with a knife or skewer of your rosemary stalk isn't sharp enough.
When all skewers have been assembled, season with salt and pepper. brush or spray with a little olive oil and cook on the barbecue or grill, turning regularly until cooked through.
Serve with a squeeze of lemon juice. Trust me, the lemon juice makes this dish sing!
