Lazy Roasted Tomato Soup

I love the rich flavours in this soup. It's a great soup to have on a lazy weekend. There is minimal prep - just throw the ingredients onto a baking tray and into the oven, and then blend with some stock or water. Easy peasy! And your whole house will smell DIVINE!!!!

Ingredients

Lazy Tomato Soup

12 tomatoes, washed and cut in half (I used Roma tomatoes for this recipe but you can use whatever tomatoes you like!)
2 onions, peeled and cut in half
1 bulb garlic with the top cut off. You don't have to use this much garlic, but I recommend you give it a try - roasted garlic has such a mild flavour.
1 tablespoon olive oil
1 1/2 - 2 cups of stock or water*
Salt and pepper to taste
OPTIONAL: If you like things spicy, add in a little chilli!

Basil & Chive Oil

1/2 cup extra virgin olive oil
1 handful basil leaves (no stalks!)
1 small bunch chives
Season with salt to taste

Method

Lazy Tomato Soup

Line a baking tray with baking paper
Arrange tomatoes, onions and garlic bulb on baking tray
Drizzle or spray with olive oil (I have an awesome oil spray bottle that I can pump full of air to produce a fine oil mist!)
Season *lightly* with a little salt and pepper.**
Roast in a pre-heated oven (150 degrees celsius) for at least one hour. Check after 30-40 minutes and turn if necessary. Lower the heat if you need to. All ovens are different so cooking time will vary. I usually cook mine for 90 minutes. We want the veggies to roast and caramelise but not to blacken. 
When the tomatoes, onion and garlic are nicely roasted, remove from baking tray and place into a high speed blender with 1 1/2 cups of stock or water. You will need to squeeze the garlic cloves out of their skins, so let it cool down before you do this. They cloves will come  If you have a high speed blender like a Vitamix, use the "Soup" setting and your piping hot soup will be ready in a few minutes! 
Alternatively, place your roasted tomatoes, onion and squeezed-out garlic cloves in a saucepan with 1 1/2 cups of stock or water. Simmer for 15-20 minutes, then blend with a stick blender.

Season with salt and pepper to taste, serve with Basil & Chive Oil

Basil & Chive Oil

Place all ingredients in a high speed blender. I use the Vitamix as it is a great size for small amounts like this.
Blend for 30 seconds - 1 minute until smooth.

Drizzle over Lazy Tomato Soup and enjoy!

* You can use whatever flavour of stock you like. But honestly, I find this soup is just as delicious if I make it with water. Just add a touch more seasoning.

** Take it easy with the seasoning at this stage. The last thing you want to do is make soup that is too salty!
