Lemon Blueberry Vinaigrette
They say that "necessity is the mother of invention", and this divine dressing was invented out of necessity. If you've been following this blog for a while you will already know that I'm ALL about eating a rainbow of veggies every day. Red, orange, yellow and green are no-brainers. But blue??? And if you have a little person incessantly pointing out your omission? I could have just tossed a handful of blueberries into my salad, but I only had frozen blueberries on hand... I had the unflinching gaze of a six year old on me and noting to lose...
So this is what I came up with and it's DIVINE!!! It's sweet and tangy and vibrant and absolutely delicious. And it's packed with powerful phytonutrients. You have to try it!
Ingredients
1 generous cup frozen blueberries
Juice of one lemon
1/4 cup apple cider vinegar
1/4 cup extra virgin olive oil
1/2 teaspoon maple syrup or honey (optional)
Salt and Pepper to taste
Method
Blend all ingredients together until combined.
Serve with the salad of your choice - especially Rainbow Salads in desperate need of "something blue"!
