Lemony Labneh and Herb Dip

A few weeks ago I shared my super simple step-by-step guide to making creamy, delicious home-made Labneh. If you haven't done so already, check it out HERE. #yourewelcome

This is one of my favourite ways to serve Labneh. Not only is it delicious, but it encourages myself and my loved ones to eat lots of veggies. Win-win!

Ingredients

300g home made labneh
Juice of one lemon
1 generous handful of finely chopped herbs of your choice. I have tried every imaginable combination of herbs with this recipe and really recommend you use a combination of Parsley, Mint, Dill and Chives. Use only the leaves (discard any stalks!).
OPTIONAL (but HIGHLY recommended!): 1 clove garlic, peeled and crushed
OPTIONAL: 1-2 teaspoons lemon zest
Salt and Pepper to taste

Method

Place all ingredients except lemon juice in a mixing bowl and mix with a fork until well combined and creamy. Add your lemon juice gradually until the you have reached a consistency you are happy with.
Season with salt and pepper to taste.
Pour dressing into a bowl and garnish with dill fronds or a mint leaf.

Serve with a rainbow of freshly-cut veggies.
