Mango Berry Bircher Muesli
I love to make up a big batch of this if friends are coming over for breakfast. It takes a few minutes to throw together and it equally delicious made on the spot or the night before. It is so simple to put together - yoghurt, oats, chia and nuts, seeds and other grains of your choice. But it is the combination of the diced fresh mango and the strawberry chia jam that really elevates this to a higher level than your ordinary breakfast.
Ingredients
400g Plain/Natural Greek yoghurt
1 1/2 Cups Rolled oats
1/2 Cup Chia Seeds
150g Almonds (and/or walnuts, pecans, pepitas, sunflower seeds)
1 Cup Shredded coconut
1/4 cup Buckwheat (optional)
2 Mangos, peeled, de-seeded and diced

Method
Place all ingredients except mango in a large bowl and mix well to combine
Fold diced mango through
This can be served immediately, or made the night before and kept covered in the refrigerator overnight.
When ready to serve, top with Strawberry Chia Jam (CLICK HERE for recipe!) and fresh raspberries
