Pico De Gallo (Mexican Salsa)
This is a traditional Mexican salsa which makes a refreshing zingy addition to any dish.
I've listed the traditional recipe here, but I have to admit I usually add in whatever I have in my fridge - cucumber, corn, avocado and capsicum all make delicious additions if you feel like going "freestyle" with your pico!
Ingredients
2 large tomatoes finely diced (or equivalent amount of plum or cherry tomatoes - I have used lots of yellow cherry tomatoes from my veggie garden in this recipe)
1 red or white onion, finely diced
1 handful coriander (cilantro), finely chopped
1 jalapeno pepper, finely diced
Juice of one lime
Salt and pepper to taste
Method
Place all ingredients in a large bowl and mix to combine
Serve as an accompaniment to Mexican food, seafood, steak or whatever takes your fancy. It goes really well with my Fish Taco Lettuce Wraps or my Super Simple Three Bean Chilli and a few slices of avocado!
