Prawn and Mango Celebration Salad with Two Delicious Dressings!

This is the perfect salad to serve during Summertime festivities. It's fresh, delicious and so simple to put together. This recipe makes a HUGE salad, so if you aren't serving a large group, adjust the amounts down.

Ingredients

Prawn and Mango Celebration Salad

Butter lettuce and/or mixed leaves
1-2 dozen cooked prawns (shrimp), de-headed, peeled and de-veined
1-2 mangoes, peeled and sliced
1 avocado, peeled, de-seeded and sliced (or diced!)
1 red capsicum (bell pepper) de-seeded and diced
3 Lebanese cucumbers, diced
3 green onions, finely sliced
1 punnet red cherry tomatoes, halved
OPTIONAL: 1 small red onion, finely diced

Mango Chilli dressing

1 Mango plus extra bits from the mangoes used in the salad
Juice of one lemon
1 tablespoon apple cider vinegar
1 mild red chilli, or dried chilli flakes. Tip: Make sure you add a small amount of chilli to your dressing at first, and keep adding it in by increments until you have achieved your desired level of heat.
1 tablespoon olive oil

Green Goddess Avocado Dressing

1 Avocado
Juice of two limes
One green onion, sliced
1 tablespoon capers
Optional: one clove garlic
1 tablespoon apple cider vinegar
1 tablespoon extra virgin olive oil

Method

For each dressing

Place all ingredients into a high speed blender and blend until smooth.
With the Spicy mango dressing, remember to gradually add in your chilli (see ingredients, above)!
If the dressings are too thick, add in a little extra water (both), lime juice (Avocado dressing) or lemon juice (Mango dressing).

Prawn and Mango Celebration Salad

Arrange lettuce and/or mixed leaves on a large festive platter.
Sprinkle cucumber, green onion, red capsicum (bell pepper) and cherry tomatoes over leaves.
Arrange each mango slices and prawns (shrimp) over salad.
Drizzle each dressing over salad in an attractive pattern.
