Strawberry Summer Salad with Ricotta Poppyseed Balls
I love that Strawberries are plentiful and cheap this time of year, and this salad is a beautiful way to showcase their delicate, sweet flavour. It's such a pretty salad, and so simple to throw together, that I love to serve it when we have people over for lunch or dinner.
Ingredients
Salad
120g baby spinach (1 bag/punnet), washed and drained
250g strawberries (1 punnet), sliced
125g pecans
Dressing
1 Tablespoon olive oil
1 Tablespoon apple cider vinegar
1 teaspoon pomegranate molases (or 1/2 teaspoon maple syrup or honey)
Salt and pepper to taste
Ricotta Poppyseed Balls
100g fresh ricotta cheese
Poppy seeds
Method
Ricotta Poppyseed Balls
Divide ricotta into 6 portions and roll into balls
Roll each ball in poppy seeds
Dressing
Place all dressing ingredients in the bottom of a large salad bowl and whisk together
Salad
Place all salad ingredients into bowl with dressing and toss
To Serve
Place salad in serving bowl and top with Ricotta Poppyseed Balls
