Whole Roasted Cauliflower in Lemon, Mustard and Garlic
Cauliflower can often be overlooked as a bit blah and boring. But it's sooooo healthy for you that as a nutritionist I love coming up with ways to make it delicious and desirable! You can see some of my other cauliflower recipes HERE, HERE and HERE!
Roasting a whole cauliflower can be a little time consuming, but it turns a veggie that is normally a boring side dish into a showstopper you will be proud to bring to the table. I personally love to serve this dish when we have friends over. The divine flavours bake right into the cauliflower. Even people who don't like to eat a lot of veggies will take a second helping of this dish.
Ingredients
1 Cauliflower, washed with leaves removed
1 generous handful mint leaves, chopped
Marinade
Juice of 2 lemons.
2 tablespoons seeded mustard
2 cloves garlic, crushed
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Method
Marinade
Combine all ingredients in a bowl and mix to combine
Cauliflower
Chop base of cauliflower so that it sits flat.
Place in a baking tray lined with baking paper and coat with half the marinade, making sure it is completely covered.
Cover with foil and cook in a pre-heated oven (180 degrees celsius) for 45-60 minutes. Cooking time will depend on the size of your cauliflower.
Remove baking tray from oven and remove foil.
Drizzle with the remainder of the marinade (be careful as the cauliflower will be hot!) and return - uncovered - to oven for a further 20-30 minutes.
Keep a watchful eye on the cauliflower and remove it from the oven when it is golden brown
To serve
Place on serving platter and serve garnished with the chopped mint leaves.
