Oven Baked Salmon with Pea & Broccoli Mash

This is such a nourishing, delicious midweek meal for a cold winter's night. And a great way to add more veggies to your diet!

Ingredients

4 salmon fillets, skin removed
1 lemon finely sliced
1/2 tablespoon olive oil
Salt and pepper

Pea & Broccoli Mash

2 heads broccoli, cut into small florets
300g frozen peas
1-2 cloves garlic
1 onion, finely diced
1/2 tablespoon olive oil
Salt and pepper to taste

Method

Pea & Broccoli Mash

Place olive oil, diced onion and crushed garlic in a large saucepan and saute over medium heat until onion is translucent.
Add broccoli florets and cover pot to allow the broccoli to steam.
After 5 minutes add frozen peas and cover again to allow broccoli and peas to cook through.
When broccoli and peas have cooked through and softened, remove pot from heat and mash all ingredients together using a stick blender.
Season with salt and pepper to taste.

Baked Salmon

Preheat oven to 180 degrees Celsius
Line a baking tray with baking paper
Place salmon fillets on lined baking tray, rub both sides with olive oil, sprinkle with salt and pepper and top with lemon slices.
Cook in oven for 15 minutes or until cooked to your liking. Cooking time will vary depending on your oven and whether you like your salmon pink in the middle or cooked through.

Serve baked salmon over a generous helping of Pea and Broccoli Mash.
