Roasted Green Beans with Chilli, Garlic & Anchovy

Roasted Green Beans with Chilli, Garlic & Anchovy

This simple dish packs a flavour punch! It makes a deliciously different side dish.

Ingredients

Green Beans
Olive Oil
3-4 anchovies
2 cloves garlic, crushed
1-2 red chillies, de-seeded and finely chopped (the heat of the chilli is completely up to you!)
Salt and pepper

Method

Combine Chilli, Garlic and Anchovy ingredients in a large bowl, mix well until combined and set aside.

Top and tail green beans. Toss in Chilli, Garlic and Anchovy Mix.

Place on a baking tray and bake in a pre-heated oven for 30-35 minutes, tossing the beans after 20 minutes and keeping an eye on them to make sure they don't burn.

Alternatively you can stir fry the beans in a wok or large frying pan.

Remove from oven/wok when beans start to blister.

Serve sprinkled with red pepper flakes and enjoy!
