Spicy Lamb Koftas with Yoghurt Tahini Mint Sauce and Lebanese Salad

This is the ultimate summer barbecue dish!

Ingredients

Lamb Koftas

8 skewers

500g lean lamb mince
1 small onion, finely diced
2 cloves garlic, peeled and minced
1 red chilli, deseeded and finely sliced
1 x 2cm piece fresh ginger root, peeled and grated
1 small handful mint leaves (leaves only, no stalks or stems), finely chopped
1 small handful coriander, chopped
2 teaspoons ground cumin
2 teaspoons ground coriander
Salt and pepper
1 tablespoon olive oil, for cooking
NOTE: if you are going to be making these on a barbecue where they are likely to be moved around on the grill a lot, I suggest adding a tablespoon of flour (I use Besan/chickpea flour) or an egg to bind the mix. I find we don't need it, but we are careful not to move the kofta too much while we are cooking them, so they don't break up.

Yoghurt Tahini Mint Sauce

150g greek yoghurt
2 tablespoons tahini
Juice of one lemon
1 clove garlic, peeled and minced
1 handful of mint leaves (leaves only, no stalks or stems), finely chopped
Salt to taste

Lebanese Salad

1 Lebanese cucumber, chopped
1 tomato, chopped
1 red capsicum de-seeded and chopped
1 red onion, chopped
1 handful flat leaf parsley, chopped
Juice of one lemon
1 tablespoon extra virgin olive oil
Salt and pepper to taste

Method

Lamb Koftas

Place all ingredients except olive oil in a large bowl.
Mix ingredients with your hands (wash them first!) to combine
Divide mix into 8 portions and shape onto 8 skewers.
Heat olive oil on BBQ hotplate or in a large frying pan.
Add lamb koftas when barbecue/stove is on high heat and sear all sides.
Lower heat and continue cooking until koftas are completely cooked through. To reduce risk of food poisoning, we don't do medium-rare with any kind of mince! Well done only! So grab one of the koftas, cut it and make sure it is completely cooked through before you serve it. If it is pink in the middle, keep cooking!

Yoghurt Tahini Mint Sauce

Place all ingredients except mint in a bowl and whisk until combined. 
Add in chopped mint and stir through.

Simple Lebanese Salad

Place all ingredients in a large bowl and toss to combine.

Serve and enjoy!
