Pan fried snapper with ginger, turmeric and chilli
/My husband cooks this when he catches snapper, and when our little organic vege garden gifts us with fresh ginger, turmeric and chilli.
Ingredients
2 snapper fillets
1 knob fresh ginger (3-4cm), finely grated*
1 small piece fresh turmeric (2-3cm), finely grated*
2 cloves garlic, minced
1 chilli, de-seeded and finely diced
Olive oil
Salt and pepper
Method
Place snapper fillets in a frying pan with 1 tablespoon olive oil
Top with ginger, turmeric, garlic and chilli.
Cook on a medium heat for 3 minutes each side or until cooked through.
Season with salt and pepper, and serve topped with the ginger, turmeric, garlic and chilli.
* If you eat a lot of fresh ginger, it is worthwhile hunting down a special ginger grater. You can find them online or in Chinese grocery stores. They grate the ginger so finely, so you don't get any stringy bits in your food!
