Cooking up a storm: pan-fried snapper with ginger, turmeric and chilli

My husband cooks this when he catches snapper, and when our little organic vege garden gifts us with fresh ginger, turmeric and chilli.

Ingredients

2 snapper fillets
1 knob fresh ginger (3-4cm), finely grated*
1 small piece fresh turmeric (2-3cm), finely grated*
2 cloves garlic, minced
1 chilli, de-seeded and finely diced
Olive oil
Salt and pepper

Method

Place snapper fillets in a frying pan with 1 tablespoon olive oil
Top with ginger, turmeric, garlic and chilli.
Cook on a medium heat for 3 minutes each side or until cooked through.
Season with salt and pepper, and serve topped with the ginger, turmeric, garlic and chilli.

* If you eat a lot of fresh ginger, it is worthwhile hunting down a special ginger grater. You can find them online or in Chinese grocery stores. They grate the ginger so finely, so you don't get any stringy bits in your food!
