Brussels Sprout Slaw
/If you are a coleslaw purist you may object to me calling this a "slaw". But whatever the name, this salad is simple, healthy and delicioius!
Ingredients
Slaw
10-12 brussels sprouts, washed and trimmed
1 white onion, peeled and finely diced
1 green apple, grated or cut into fine match sticks
1 handful red grapes, washed and cut into quarters
1 generous handful of almonds, walnuts, pecans or nuts of your choice, chopped
1 avocado, de-seeded, peeled and cubed
Dressing
2 tablespoons apple cider vinegar
2 tablespoons extra virgin olive oil
1 tablespoon seeded mustard (or dijon mustard if you prefer!)
1 tablespoon maple syrup (or honey if you prefer!)
Juice of one lemon
1/2 teaspoon salt
Method
Dressing
Place all ingredients in a bowl and whisk to combine
Slaw
Finely shave brussels sprouts. You can do this with a knife, mandolin or a food processor.
Add to a large bowl and add in all other Slaw ingredients
Add in dressing and toss well to combine
