Lamb & Sweet Potato Shepherd's Pie
/This is classic warming winter comfort food, with a healthy twist!
Ingredients
400g lean lamb, diced
400g frozen peas
2 large carrots (or 3 smaller carrots) diced
1 large white or yellow onion, diced
1 clove garlic, crushed
1 tablespoon olive oil
Salt and pepper to season
Sweet potato mash
3 sweet potatoes
1 white or yellow onions, cut in half
1-2 cloves garlic
Method
Place a sheet of baking paper in a baking tray
place the whole sweet potatoes, halved onion and garlic cloves into baking tray and bake in pre-heated oven (180 degrees celsius) for 40 minutes to 1 hour (until potatoes are cooked through)
While sweet potatoes are baking, place olive oil and lamb pieces in a frying pan and brown. When browned, remove lamb pieces from pan and place into baking dish.
Add diced onions, garlic and diced carrot to the frying pan and saute until translucent.
Add sauteed onion/carrot mix to baking dish with the lamb, add frozen peas and mix together.
When sweet potatoes are cooked through, remove from oven and allow to cool for 15-20 minutes before removing the peel. It should come away easily. Squeeze the cooked onion and garlic out of their skins (these will come away easily too). Season with salt and pepper and mash together with a stick blender or blitz in a food processor.
Add sweet potato mash to the top of the lamb and vegetables in the baking dish, and place in oven for 30-40 minutes or until lamb pieces are cooked through.
