Minty Pea & Broccoli Soup
/This is one of my favourite super-fast soups. I feel so virtuous when I eat it as it is so green and healthy!
Ingredients
2 heads broccoli, cut into small florets.
400g frozen peas
2 white onions, diced
1 tablespoon olive oil
3 cups stock or water
1 generous handful mint leaves
Salt and pepper to season
Method
Place diced onion and olive oil into a frying pan and saute until translucent
Add broccoli florets and frozen peas. Cover and leave to steam for 5-10 minutes, or until broccoli florets have softened.
If you are using a high-speed blender like a Vitamix:
Place all ingredients in the blender with 3 cups of stock or water and blend for 1-2 minutes or until smooth. If you are using a high speed blender like a Vitamix it will also heat the soup.
If you are using a hand-held stick blender:
Add water or stock to the pot, simmer for 5-10 minutes then remove from heat and blend until smooth using a stick blender.
Season with salt and pepper to taste.
Serve and enjoy!
