Oysters with Tangy Lemon Sorbet

If you love oysters, this is the perfect Summetime way to enjoy them! I first tried this in a fancy restaurant years ago, and I imagined it would be complicated to make. But actually, if you have a high-speed blender like a Vitamix, it is simple and fast to make. And it's pretty impressive to bring  to the table when you have guests over!

Ingredients

One dozen oysters, freshly shucked

Tangy Lemon Sorbet

3 lemons, peeled, de-seeded, cut into quarters and frozen
2 tablespoons apple cider vinegar or champagne vinegar
1/2 teaspoon maple syrup
4 ice cubes

Method

Tangy Lemon Sorbet

Place all ingredients in vitamix or other high speed blender and blend until sorbet consistency is achieved. You may need to use the tamper tool.
Taste and adjust sweetener, vinegar or add extra ice to taste.

Serve with oysters and enjoy!
