Roast Pumpkin Salad with Sun-Dried Tomatoes and Fetta
/This is an attractive, vibrant salad. It's simple enough to throw together for a quick dinner, but also looks beautiful on the table when entertaining.
Ingredients
Salad
Roast pumpkin, cut into chunks
1 cos lettuce, washed and chopped
1/2 red onion, finely diced
6-8 pieces of sun-dried tomato, chopped
100g fetta cheese, crumbled
10 kalamata olives
2 green onions, finely chopped
Dressing
2 Tablespoons Balsamic vinegar
Juice of one orange
3-4 Tablespoons Olive Oil
Salt and pepper to taste
Method
Dressing
Combine all ingredients in a bowl and whisk together
Salad
Arrange cos lettuce on a platter
Top with pumpkin, red onion, sun-dried tomatoes and olives
Sprinkle with fetta, followed by green onions
Drizzle with dressing or serve on the side.
