Scallops and Broccoli with Ginger, Chilli, Garlic and Shallots
/This dish ticks all my boxes for a mid-week dinner. Delicious flavours, the right amount of protein, lots of veggies, not too many carbs, and super fast and easy to throw together!
Ingredients
300g scallops
2 heads broccoli, cut into small florets (dave the stems and slice them into a veggie stir fry)
1 red chilli, de-seeded and finely sliced
1 2cm piece of fresh ginger, peeled and finely grated
1 red shallot, finely diced (or one small red onion, finely diced)
3 green onions, finely sliced
1-2 cloves garlic, peeled and crushed
1 tablespoon sesame oil
4 tablespoons ponzu sauce (or 2 tablespoons lite soy sauce or tamarin)
Method
Place all ingredients except broccoli in large frying pan or wok.
Cover and allow broccoli to steam and soften for 5-6 minutes.
Add in scallops and stir fry or steam until scallops are just cooked through.
Serve garnished with sliced spring onions.
