Simple Marinated Green Beans

Green beans are cheap and plentiful in the warmer months. We grow our own, and some weeks we are almost overwhelmed by our green bean harvest. This is a fast, simple, delicious way to enjoy green beans. And it can be eaten warm or kept in the fridge and eaten cold. Ours never lasts that long...

Ingredients

Green beans, topped, tailed and sliced in half
Olive oil
Apple cider vinegar
1-2 cloves garlic, crushed. Or if you don't like raw garlic, a finely diced red shallot gives a milder, sweeter flavour.
Salt and pepper
OPTIONAL: finely sliced fresh basil leaves and 1/2 teaspoon dried oregano (My husband is Italian and this is how his family have always enjoyed them).

Method

Place green beans in a bowl, cover with boiling water and leave for 1-2 minutes
Drain water from bowl, and add a splash of olive oil, apple cider vinegar and the garlic (or red shallot).
Season with salt and pepper, toss together and let it sit to marinate for 5-10 minutes before serving.
