Simple Thai Dressing

Thai salads are crazy simple to make. Their "foundational" ingredients are coriander (cilantro), mint and green onion. From there you can go a bit freestyle and dress up your Thai salad with some finely sliced red onion, red capsicum (bell pepper), grated carrot and diced cherry tomatoes.

While I have always found the salad bit easy, I have been intimidated by the dressings, never quite striking the right balance of the five flavours of Thai dishes (sweet, sour, spicy, salty, and bitter). But this dressing works, even when I play around with the ratios of the different ingredients. So long as I include everything, I am rewarded with a Thai salad that tastes pretty darn authentic - and delicious!

Ingredients

Juice of 2 limes
1 Tablespoon sweet chilli sauce OR 1 tablespoon Siracha chilli sauce plus 2 teaspoons maple syrup OR 1 finely diced chilli and 1 teaspoon honey
2-3 teaspoons of sesame oil
1 tablespoon fish sauce. If you don't have fish sauce, don't panic, just use 2 teaspoons of soy sauce

Method

Place all ingredients in a bowl and whisk to combine. Serve with Thai Salad.
