Smoked Salmon Salad
/This dish is one of my go-to's if I have a carb-averse friend coming over. It's fast to prepare, delicious and provides a rainbow of super-healthy phytonutrients!
The core ingredients of this salad are hot smoked salmon (or cold smoked if you prefer), avocado, onion (red or white) and capers. Then simply build out the rest of the salad using a rainbow of your fave veggies. The following recipe lists what I had on hand the night I photographed this dish.* But feel free to use whatever you prefer!
Ingredients
200g hot smoked salmon, chopped into small pieces
1 large avocado, diced (or two small)
1 large red or white onion, finely diced
1 generous tablespoon capers (or more if you love them!)
1/2 red capsicum, diced
1/2 green capsicum, diced
5 red cherry tomatoes, quartered
5 yellow pear tomatoes, quartered
1 generous handful baby spinach, roughly chopped
1 Lebanese cucumber, diced
1 tablespoon extra virgin olive oil
1 tablespoon apple cider vinegar
Salt and pepper to taste
Method
Place all ingredients in a large salad bowl.
Toss to combine.
Serve and enjoy!
