Steve's Asian Scallops
/My husband loves to visit Sydney Fish Market on the weekend and bring home an array of fresh seafood. This recipe ticks all the boxes for a fast, delicious, nutritious after-work meal. Serve it with a side of steamed veggies and you're set.
Ingredients
200g scallops
2-3 cloves garlic, minced
One 3cm piece of fresh ginger, peeled and finely grated
1 red chilli, finely sliced
2-3 green onions, finely sliced
2 teaspoons sesame oil
3 teaspoons olive oil
Juice of one lime
1 teaspoon lite soy sauce or tamari (optional)
Salt and pepper to taste
Method
Place olive and sesame oil in frying pan and eat gently
Add garlic, ginger and chilli (and soy/tamari if you are using it).
Saute for a minute.
Add scallops and cook, turning frequently, for 5-6 minutes or until cooked through.
Add lime juice and green onions.
