Strawberry Ripple Chia Porridge
/This is a delicious and healthy breakfast. I prepare this in batches so we have an instant yummy, healthy filling breakfast ready to go in the morning. And Chia seeds are an excellent plant source of omega 3's!
Ingredients
Strawberry Chia Jam
Juice of 1 orange
10 medium strawberries
3 tablespoons chia seeds
1 teaspoon maple syrup or honey (optional, depending on how sweet you like it)
Vanilla Chia Porridge
1 cup milk of your choice (dairy, almond milk, soy, rice, etc)
1/2 teaspoon vanilla paste or powder
Sweetener of your choice (I use 1 teaspoon maple syrup and "boost" it with 2-3 drops of liquid stevia)
4 tablespoons chia seeds
Method
Strawberry Chia Jam
Place orange juice and strawberries in a Vitamix or other high speed blender and blend until liquidised.
Place in a bowl with chia seeds and your chosen sweetener. Make sure oyu taste it before you add sweetener - if your oranges and strawberries are sweet you may not need any extra sweetener!
Stir well to combine.
Leave to sit for 20-30 minutes, until mix starts to form a gel.
Vanilla Chia Porridge
Place milk of your choice in a bowl and stir in chia seeds, vanilla and your chosen sweetener.
Leave to sit for 20-30 minutes, until mix starts to gel.
To serve
Pour Vanilla Chia Porridge Mix into a pouring jug. Add the Strawberry Chia Jam and swirl it onto the Vanilla Chia Porridge mix.
Pour into serving glasses.
Cover and refrigerate overnight. Breakfast will be ready and waiting for you in the fridge in the morning!
Serve garnished with fresh strawberries.
